On this day 19th July, which is National Daiquiri Day we are inviting you to try an intriguing cocktail of Happy Heidi’s signature spirit that has been aged in her ex whisky casks.
The Daiquiri Cocktail “is a world unto itself,” they say. “You might explore it for the rest of your life.”
The classic Daiquiri recipe specifies a light Cuban rum, but since Cuban rum is not something we can easily grab, we choose a substitute and use our King Island Distillery signature spirit, whisky cask aged 40°S pure vodka, because we can. Combined in a cocktail shaker with a squeeze of fresh lime, an easy to make sexy strength syrup and a few other interesting ingredients to add extra flavour for you to savour.

Recipe for National Daiquiri Day
60ml ( 2 full nips ) King Island Distillery ex whisky cask aged vodka
17ml fresh nice lime juice
15ml ( ½ a nip ) Syrup ( 2:1 ) 1 x cup granulated sugar : 1/4 x cup water
Combine sugar and water in a small saucepan over medium heat and stir until sugar dissolves. Remove from heat, let cool to room temperature and transfer to a clean glass jar. Store in the fridge for the next Daiquiri round.
7 ml cherry liqueur
2 dashes angostura bitters
7 drops anise-flavoured liqueur, or absinthe
Load it all up into a shaker with love and add * ice, shake it, strain and serve into a chilled your fanciest cocktail glass
Garnish with a lime slice, if you like

Make your ice from cloud juice. It needs to be nice water, not chlorinated liquid some taps pour out.
Load a shaker with one medium ( 5 cm ) cube and two small ( 2.5 cm | 1-inch ) ice cubes.
Barmen say that, “shaking with two small cubes ( for dilution ), alongside one large cube ( for texture ), hits the sweet spot; delivering a perfect creation, at the right temperature and alcohol balance.”
